There seems to be a problem with handling the main windows resize events. If you minimize the window it will no longer respond to resize events (you can't unminimize, maximize or resize it). You're only option is to kill the application (with no option to save).

I do not currently have a system running Ubuntu so can't test the exact configuration. I did try it out here on Gentoo, but it worked ok (the resize response was pretty laggy - I think I'll look into that sometime).
Did you build CEGUI yourself or is it a prepackaged version?
I'm not sure if scriptkid has a linux system on the go or what distro he runs, if he also can't reproduce the issue I'll attempt to install Ubuntu on a spare computer sometime (will not be for a couple of weeks or so) and go from there.
I'll add a mantis ticket so it's not forgotten

I have the similar problem. The window is never back after being minimized. Both on Debian sid and Archlinux. Does it have sth to do with compiz-fusion? I have compiz install on both of my PCs. It is interesting that, it works fine with compiz but does not with metacity.

Hmmm, that's an interesting point. I don't know if the OP is running with compiz-fusion, but I am not and did not get the issue, so it's certainly possible that you're on to something as far as window managers go.
I've not tested anything further myself at the moment, since my fifth and sixth machines (that used to be employed for testing of what I'll refer to as "other OS" issues) are packed away for space reasons.
